Vinification :
Summer thinning out of the crop on the carignan stocks
Check of grape maturity and picking at full ripeness
First selection of the bunches on the vineyard site
Second selection upon arrival at the cellar
Stemming and light crushing
Long fermentation and maceration time (3 weeks) including regular foot-treading

Comments about Wine-tasting :
Purple dress. Deep and captivating nose the aromas of which fond of red berries and black grow rich of a mineral and spicy dimension(size). In mouth scale, average power, dissolve(fade out), but especially freshness. Attractive final on a peppered register. Balanced well, built on rather fine tannins, this Côte du Roussillon village is made a success well.

Delicatessen, cheeses, fishes in sauce, meats red, stews, cock with a wine sauce.
