Location and soil :
Schistose parcels on the territories of Latour de France : 2 ha 99 a 70 ca in total.
The estate possesses 15 hectares in total, out of which 12 devoted to the production of Rivesaltes.

Grapes varieties :
- 50 % old Grenaches noirs vines
- 50% mourvèdre

Yield : 18 hectoliters per ha

Vinification :
Summer thinning out of the crop on the mourvedre stocks
Check of grape maturity and picking at full ripeness
First selection of the bunches on the vineyard site
Second selection upon arrival at the cellar
Stemming and light crushing
Long fermentation and maceration time (3/4 weeks) including regular foot-treading
Final blending in january 2012

Aging : Vine kept in tanks

Total alcohol : 14.5 vol%

Comments about Wine-tasting :

Dress steady garnet, red reflections. Dense, spicy, clear(net) nose. Attack round, generous mouth freeing(delivering) spicy steams, light taste of licorice, nuances of tobacco, afforested discreet. Firm finale, tense. Successful wine.

Food pairings :

Stew, wild boar, cock with a wine sauce, delicatessen, black sausage, cheeses, beef ribs, chocolates.
